Chocolate Frosted Banana Cake

Chocolate Frosted Banana Cake - This country style, homemade banana cake recipe is suoer moist and dense from the banana puree. We even included a second recipe for luscious choclate frosting, because the only thing that make this banana cake recipe better is chocolate!

Ingredients to make Chocolate Frosted Banana Cake
2/3 cup Milk (I used almond)
1 tbsp Vinegar
1 cup softened Butter
1 1/3 cup Demerara Sugar
2 Eggs, beaten
1 1/2 cups Banana, pureed
2 tsp Vanilla Extract
2 cups All Purpose Flour
1 cup Cocoa
1 1/2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
Optional chopped walnuts can be folded in at the end
FROSTING:
1/2 cup Cocoa
1/4 cup melted Butter
1/4 cup Banana, pureed
2 tbsp + Milk (the recipe calls for 2 tbsp but I needed much more to bring this icing together where it was still thick and smooth. Use your eyes!)
1 tsp Vanilla Extract
3 cups Icing Sugar
Directions to make Chocolate Frosted Banana Cake
Preheat oven to 350Œ and oil a bundt pan really well.
In a separate bowl, combine all the dry ingredients. Slowly add the dry ingredients to the wet. Donft overmix! It should be a bit lumpy. Spoon batter into the well oiled bundt pan.
Bake for 40-45 minutes until a knife comes out clean.
FROSTING: In a medium bowl or food processor, whisk or mix together the cocoa, butter, banana, milk and vanilla. While whisking add the icing sugar until combined and smooth.

Ingredients to make Vanilla Cupcakes or Cake with Frosting
1 1/2 cups self-rising flour
1 1/4 cups all-purpose flour
1 cup (2 sticks) unsalted butter, softened
2 cups sugar
4 large eggs, at room temperature
1 cup milk
1 teaspoon vanilla extract
Vanilla Buttercream:
1 cup (2 sticks) unsalted butter, softened
6 to 8 cups confectioners’ sugar
1/2 cup milk
2 teaspoons vanilla extract
Directions to make Vanilla Cupcakes or Cake with Frosting
Preheat oven to 350 degrees F. Line 2 (1/2 cup-12 capacity) muffin tins with cupcake papers. In a small bowl, combine the flours. Set aside.
In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. Add the dry ingredients in 3 parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat.
Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended. Carefully spoon the batter into the cupcake liners, filling them about 3/4 full. Bake for 20 to 25 minutes, or until a cake tester inserted into the center of the cupcake comes out clean
1 cup at a time, beating well after each addition (about 2 minutes), until the icing is thick enough to be of good spreading consistency. You may not need to add all of the sugar.
Easy Cherry Streusel Coffeecake Recipe

A nice hardy streusel coffeecake recipe for you and your friends to enjoy. The cherries ad a nice touch to this nice dessert recipe. Enjoy!
Ingredients to make Cherry Streusel Coffeecake Recipe:
2 1/4 c All-Purpose Flour
3/4 c Granulated Sugar
2/3 c Butter, softened
1/2 t Baking Powder
1/2 t Baking Soda
3/4 c Carnation Evaporated Milk
1 x -(undiluted)
1 T Lemon Juice
1 ea Egg
1 t Almond Extract
19 oz Cherry Pie Filling
1/3 c Sliced Almonds
Combine flour and sugar in a large bowl. Cut in butter until mixture is crumbly. Set aside 1/2 cup of the mixture. Add baking powder and baking soda to the remaining flour mixture. Combine evaporated milk and lemon juice. Stir well and leave 5 minutes until thickened. Add egg and extract; beat well. Add to dry ingredients; stir just until moistened.
Spread 2/3 of the batter over bottom and about 1 inch up the side of a greased 9-inch springform pan to form a shell. Spread pie filling in shell. Drop small spoonfuls of remaining batter over pie filling. Stir almonds into reserved crumb mixture. Sprinkle evenly over cake.
Bake in 350F oven 50 to 55 minutes. Makes 1 cake.
NOTE: You can substitute 2 1/4 cups All-Purpose Wheat & Oat Flour -OR- 2 1/2 cups Cake & Pastry Flour.

Made into old fashioned layer cake, we snuck a little raspberry jam into the homemade frosting for an added subtle flavor. Definately a “Chocolate Lovers” dream come true!

Checkerboard Cake

Checkerboard Cake - This distinctive cake has been a family favorite at our house forever, and actually is a “No-Bake” dessert. The chocolate sauce is made stove top, but thats all!
Prep Time: 20 mins |
Ingredients to make Checkerboard Cake
3 Unsweetened chocolate 1 oz Squares or the melted choc
1/2 c White sugar
1/2 c Hot water
1 tb Gelatin,unflavored
2 tb Cold water
4 Egg yolks,beaten
4 Egg whites,beaten
1 ts Vanilla
1 c Heavy cream,(whipping)
1/2 c Almonds, blanched,browned,coarsely chopped
1 lg Angel food cake
Directions to make Checkerboard Cake
Combine hot water, sugar and chocolate in double boiler. Heat until chocolate melts. Stir to blend. Soften gelatin in the cold water and add to chocolate mixture. Stir and cook until smooth and thick-about 5 minutes. Add chocolate mixture to egg yolks. Mix well. Cool 5 minutes.
Add vanilla then fold in stiffly beaten egg whites. Cool completely. Whip the cream and fold in nuts. Add to the chocolate mixture.
Grease an angel(tube)cake pan. Break cake into egg size pieces. Put a layer of cake pieces into pan and pour some of the cholcolate mixture over and let it run through, repeat until all the cake and sauce are used. Cover and let set in refrigerator for about 8 hours. Ice with whipped cream or (Cool Whip)after turning out on serving plate and decorate with browned almonds.
The cake can be iced several hours before serving and should be served real cold.

Black Forest Ice Cream Cake

| Black Forest Ice Cream Cake - This glorified black forest cake is also an ice cream cake, and great for summer, when it is hot outside. A wonderful, “cooling off” dessert! While it is not hard to make, it does require some freezing time, therefore not a last minute dessert, it does require some plannig.

1 qt Golden vanilla ice cream,softened
1 3/4 c Unsifted all purpose flour
2 c Sugar
3/4 c Cocoa
2 ts Baking soda
1 ts Baking powder

1 c Strong black coffee
1 c Buttermilk, or sour milk
1/2 c Vegetable oil
1 ts Vanilla
3 c Whipping cream
1 c Cherry pie filling
** To sour milk, use 1 TBSP vinegar and enough milk to equal 1 cup.
